We challenged chefs of three different levels – an amateur, a home cook and a professional chef – to make their versions of a hamburger. And then we brought in a food scientist to review their work. Which hamburger was the best?

    We talk a lot about which one looks best, how adorable the level 1 cook us, how awesome the level 2 chef is, how the level 3’s is overkill, but credit to the food scientist she really helps you understand what’s going on and explains the dos and don’ts well without being preachy or overly critical.

      Toni Ann Barandon it’s raw honey…. did you see all that blood pour out when he bit into it? 6:50 he cooked it for 3 minutes on each side… and his burger was 1 1/2 thick… the middle is probably cold… enjoy your raw ground beef.

      +Dirty Dan That wasn’t blood though, that’s myoglobin – distant chemical relative, but pertaining to meat compounds being broken down in the cooking process. I’d estimate his burger was probably medium rare or medium, which shouldn’t be a problem when you’re sourcing your own meat. Cheap meat, I’d definitely tend more towards medium to medium well, but all that fatty myoglobin juice is where the flavor is in a burger.
