Bacon And Egg Fried Rice

Serving Size: 4

3 large eggs
8 ounces bacon
1 medium onion
1 tablespoon vegetable oil
5 cups cooked rice
Salt, to taste
Black pepper, to taste
1 teaspoon sugar
2 tablespoons soy sauce

Green onions, chopped

Beat three eggs in an empty bowl, add a bit of salt until well-combined.
Cut bacon into 1-inch pieces and dice the onion finely.
Heat oil in either a wok or nonstick frying pan over medium heat, and add beaten eggs. Gently scramble the eggs, when the egg is almost done, remove from wok, and set aside.
Add bacon to the wok and allow it to render down and become crisp. Once the bacon is done, take it out of the wok and set aside, along with the scrambled eggs.
Add the diced onion to the wok and stir-fry until translucent. Then add the cooked rice, make sure the rice is fluffed and cooled, and stir-fry for 2 to 5 minutes. Use spatula to break up any clumps. Add the salt, pepper, sugar, and soy sauce. Stir for another minute or so.
Once there is steam coming off the rice, and is completely heated through, add scrambled eggs and cooked bacon.
To serve, sprinkle with green onion. Enjoy.

    There’s already salt in the soy sauce, bacon, and that was added to the
    eggs. You didn’t need to add more the rice.

    sorry bacon in fried rice sounds amazing but is a terrible idea. i’m a
    local from hong kong and i don’t know how many fried rice i’ve had in my
    lifetime (i’m having one right now), and bacon fried rice tastes really bad
    for some reason, it doesn’t work. i’m not being anal with authenticity
    here, like italians say you should never have double cream in carbonara
    even if it does taste good, bacon fried rice is actually kind of disgusting
    taste wise, all you end up with is a mouthful of disgusting grease that
    stays in your mouth for hours, and people showing disgust and covering up
    their noses when you lean in too close to speak to them. now, barbecued
    pork is a different matter, and that’s the kind of pork you want to have in
    your fried rice.
