This is a delicacy in my family!
Except, we don’t put in the marshmallows (it’s sweet enough without them), and we simply call it Acini…..since “Frog Eye Salad” is a tad offputting.
But, my family can down an entire tub of the stuff every holiday or special occasion. My grandma has made it so much over 20 years that she has perfected the recipe.

@Anonymous Fellow Pasta is pretty much just wheat, which has a mild, slightly sweet flavor when not salted. It would not clash, but rather let the other ingredients feature while also keeping them from overwhelming. It’s actually a pretty clever base for a dish like this

@Anonymous Fellow The pasta is pretty much the foundation of the dish. Without it, you have sloppy cool whip with fruit mixed in. It’s the same reason why you cook spaghetti noodles for spaghetti.
It kinda reminds me of the “pink stuff” my dad makes. He mixes a tub of cool whip, a tub of cottage cheese, a can of fruit cocktail and a packet of cherry Kool aid powder. Just about the healthiest ‘desert’ one can make tho I admit it’s quite the religiously tainted travesty

Well I may have to try a small version of this haha, it’s only been in recent years I’ve been able to appreciate cottage cheese with fruit.
I grew up eating this, always loved when my friends looked at me like I murdered their mothers when I told them what it was, most people thought it was literally eyes in cool whip. Also, I never have seen it made like this, usually it’s just the fruit, the juice from the fruit, the noodles and cool whip. You also need a lot more whip to noodle ratio
My mom makes it the way he did. Although I think the recipe he used uses too much sauce and not enough cool whip.

As someone who’s been to tons of church potlucks, I’ve had this monstrosity a few times. I always forget about the times I’ve had it before. I never learn my lesson.
