Meat Expert Guesses Cheap vs Expensive Deli Meats | Price Points | Epicurious

Epicurious challenged meat expert Eli Cairo to guess which one of two deli meats was more expensive. Cairo breaks down cuts of salami, ham, bologna, mortadella, hot dogs, sausages, prosciutto, . For each round of deli meats, Cairo visually scans, smells, and taste tests each meat before guessing which deli meat costs more. Once the prices were revealed, Cairo explains why a specific deli meat costs more and dives into specifics on what to look for in a deli meat.

      I thought they were obvious too, was waiting for a plot twist where he got one wrong or something. I still found it really interesting though.

      Yeah because just look at it, it’s smaller and all bumpy, looks less machined and more eyeballed; the other one’s bigger, rounder, and has a condom over the top of it. Everybody knows expensive foods are smaller.

      +4man101 That’s actually a bad sign, Cheaper hams to make sure production is quicker tend to use ham Aroma to create that lovely smell, rather then having it smoke/cure for 3 days (as this is obviously expensive and costs a lot of space).

      (Don’t get me wrong, as someone with a tyramine allergy, (Tyramine forms when things cure/smoke long) this is amazing for me, it means I can eat ham where I usually can’t)
