    For béchamel sauce you dont have to whisk so hard.

    Use cold milk with hot roux and it would form clumps, even if you dump it in. I make a lot of béchamel and this makes it easier.

    Only two episodes in, but I’ve got to say: I’m loving the new show already! It’s excellent. I love the fact that you explain the reason why some things work and others don’t. It makes it easier to remember and actually experiment and cook for yourself. If you can fit it in the program, I personally would like to know more about acid. It’s underused in most home cooking in my country but I’ve always heard bits and pieces about how well a little bit of lemon juice can make almost everything better.
