    I hope Keith isn’t too broken up about his Mac. Honestly, it was probably the pineapple that caused the “=overnight metamorphosis from “pretty good” to “oh my gosh.” The acidity of pineapple can curdle cheese and bring a sort of… stomach acid quality to food when left over like that (I wouldn’t doubt if that’s what caused Ro’s reaction). If he’d left the pineapple and toppings for last and only combined it and baked it like… an hour before judging, it probably would have been better.

      @rannierunsfast Doesn’t sound like you have a sense of humor. Of course Keith isn’t truly “sensitive” about it – he’s a grown man and he reacts this way on nearly every episode. What he had should have worked really well, but the pineapple and lime really messed up his food over night and this is hopefully something he’ll learn for the future. You didn’t need to be “sensitive” about this original comment and feel the need to add yours.

    the thing that morphed with keith’s mac and cheese is that pinapple has enzymes in it, enzymes that can cook/dissolve meat, so that meat was rotten, because it was left in pinapple enzymes for 12 hours, so all im going to say is that rossannas body was right to try and get it out.

      Everything you typed sounds right, but can someone explain why it’s OK to use pineapple juice to tenderize beef? I use pineapple for bulgolgi and it turns out fine

      Caroline because the enzymes help break down the toughness in meats (starts to pre digest it basically) but leave it to long and it will break it down to much if you don’t cook the pineapple.

      @Caroline not sure if im right but i think its ok to leave it on a few hours to soften the meat and get the flavor and then after you cook the meat the enzymes in the pineapple get neutralized. Like in alpastor you cook the meat along with the pineapple but in Keith’s case he put the lemon and pineapple juice after he cooked everything

      @Caroline It depends on how long it’s marinading for. The bromelain (enzyme) in the pineapple juice will break down the proteins in the meat causing it to be less tough, which if left for too long, will degrade the meat. Pineapple juice also has less bromelain than fresh pineapple, so the meat is being subjected to less enzyme and thus has a slower rate of reaction. I’m pretty sure the cap for marinading with pineapple tends to be 12 hours, with a recommended 2-4 hours?

      I was going to say that it was probably acid in the pineapple that messed up Keiths dish but I wasn’t exactly sure what it did so thank you for saying this 😅

    This episode: You can serve floor dough, it’s a food safety issue.
    Previous episode: serves raw/ undercooked “cinnamon” rolls.

      Agreed! I don’t know how much of this is real and how much is plot creation (watch the Behind the Scenes on the Second Try channel), but assuming it’s real, I love how Zach has gone from not caring and trying to do the most absurd things possible, to actually making the recipe without a recipe. Yay Zach!

      And poor Keith! 😢 I don’t know why mac and cheese was a 2-day challenge either, Keith.
