    If you live in California, check out Cold Springs Tavern… goes back to the horse and wagon days and offers food like this. It’s super rustic and about 30 minutes from here in Santa Barbara. Such an awesome place to eat at and see.

    Venison tends to be “gamey” when the butcher get metatarsal gland on his/her skinning knife and touches the meat with it. If you can avoid that and do a 1 to 3 day brine before making your stew it doesn’t really matter what the deer was feeding on ( as long as it wasn’t garbage). Side note- the best kind of bear fat is from bears that feed mainly on blueberries in the late fall. its tastes just like blueberries!
