I don’t think Uncle Roger could do a reaction vid with any chief watching a bad cooking vid since I’m sure it would cause some unnecessary tension within the industry. Plus, if it was someone like Gordan, anything he says can make or break most people’s career which could lead to him being sued and nobody wants to deal with that

For me, I usually fried the white part of the spring onions and after making the fried rice, I add the green part of the spring onions last. That way you can have some smell from the fried spring onions while also having the texture of the spring onions. Don’t need to fried all, just the white part cuz the white part is a little bit heavy to taste for some people, so fried them can make those people still can “taste” the smell instead (I think)
I’m asian, sometimes i do this as well. Sometimes you just get young spring onions with harder white part that can be unpleasantly strong if raw.
People make a huge fuss about authenticity. But back here at home we actually just use whatever available lol. Sometimes you have the ingredients in the fridge, sometimes you replace it with something else.
I use adam liaw’s recepies for all my Asian dishes.. he’s legit. really stoked I get to see him working with uncle roger
